Change is no good... unless it is.
Since I graduated from college back in 2008, I’ve wanted to pursue a life and career in the food industry. I cooked mainly as a hobby, traveled and eaten my way around a bunch of cities and even created a few food blogs with friends. In 2016, I finally I applied to culinary school and in 2017, when I arrived on campus at The Culinary Institute of America, things got real. Even then, it was only as real as a student moving in on their first day. Not as real as working the hot line in New York City. Not as real as being cursed at by your chef. Not as real as adding a 10th ticket to your ticket queue. Despite all the stress that cooks face, there’s a part of me that will appreciate the experience, both highs and lows.
The industry is hurting tremendously and it will never be the same.
It’s heart breaking to see news of some beloved restaurants closing for good and the lack of aid that small businesses are facing. However, it’s an industry that knows how to survive. When people think of someone going to culinary school, they think about the cook who will come out and open a restaurant or the baker that opens a bakery. We’re so much more than that. We become food writers, specialty food purveyors, hotel managers or culinary scientists working to develop that latest food innovations for major corporations. The careers are endless. That’s the beauty of being in the food industry.
You don’t need to be stuck in one place hustling away in a hot kitchen for the rest of your life if you don’t want to.
That brings me to this blog. It’s a way for Weny and me to share what’s going on in our lives as we navigate our careers after culinary school. We can share what we’ve learned to all of our friends and family who we might not get to see or talk to as often. We can show pull back the curtain for those curious as to what goes in the mind of a chef and the lives of entrepreneurs. We hope you keep following us here, on Instagram or where ever else as we dabble in recipe testing, trying new restaurants, food media and eventually opening our own business.
